Peanut Butter Balls (Gluten-free)

Ingredients

1 cup gluten-free peanut butter

3 tablespoon of organic maple syrup

¼ cup organic gluten-free brown rice crisps

Dash of salt

Semi-sweet and dark chocolate

Directions

  1. In a food processor, blend together peanut butter, maple syrup, brown rice crisps, and salt until it forms into a ball.

  2. Roll into balls and place on a cookie sheet lined with parchment paper.

  3. In a microwave glass bowl, add ½ cup of semi-sweet chocolate and ½ cup of dark chocolate (both cut into pieces). Microwave on power level 5 for 1 minute. Stir mixture. If not completely melted, heat for another 30 seconds. Stir and repeat again if not melted.

  4. Roll each ball into the chocolate mixture and return to parchment paper to dry. Store the balls in a container.

Makes about 15 balls.
